Her recipes involve placing all the ingredients into a single roasting tin and then baking them in the oven, resulting in dishes that are both easy to make and full of flavour.

As a single mother with a teenage daughter and a busy practice, this is exactly the sort of recipe book I like – quick preparation, fast cooking times and tasty low carbohydrate meals (a few need adapting!) with minimal washing up.
